Copper Hill Olive Oil
In addition to our farm in Talent, we grow olives in Northern California where the Muller family has farmed for three generations. We call it Copper Hill Olive Oil because of the red, rocky, soil that makes up the hill where we grow the olives. We grow several varieties of olives, including Arbequina, a Spanish variety of olive originally grown in Catalonia that produces oil with a fresh, grassy taste. Koroneiki is a Greek variety from the Peloponnese Islands that tastes peppery and fruity. Frantoio, Leccino, and Pendolino are Tuscan varieties that produce more mild oil, the typical “Italian” flavor that many people are accustomed to. We also sell a blend of these oils. Our latest addition is our Arbequina oil pressed along with meyer lemons for a zesty hit of citrus.

We started growing olives in 2003 and have been using organic practices since 2008. The olives are harvested and pressed within hours of picking, ensuring the ultimate in quality and freshness. All of our oils are classified as extra virgin and can be used for dipping bread, salad dressings, or cooking.
